Ingredients

Wet Ingredients

• 2 large eggs

• 1 cup skim milk

• ½ cup unsweetened applesauce

Dry Ingredients

• 1 cup flax pancake mix

Mix-Ins

• 1 cup frozen blueberries

• 2 tbsp hemp hearts

Preparation

Step 1


Mix Wet Ingredients

In a large bowl, whisk together the eggs, skim milk, and applesauce.


Step 2


Add Dry Ingredients

Add the flax pancake mix and stir until just combined. The batter should be slightly thick.


Step 3


Fold in Blueberries & Hemp Hearts

Gently fold in the frozen blueberries and hemp hearts.


Step 4


Heat the Pan

Heat a non-stick pan or griddle over medium heat. Lightly grease if needed.


Step 5


Cook

Pour ¼ cup of batter per pancake. Cook 2–3 minutes until bubbles form, then flip and cook 1–2 minutes on the other side.


Step 6

Serve

Enjoy warm with extra berries, banana slices, or a spoon of unsweetened applesauce.
