Prepare the Crust


  1. Add almonds, dates, cocoa powder, coconut oil, and salt to a food processor.

  2. Blend until a sticky, crumbly mixture forms.

  3. Press the mixture firmly into the bottom of a lined 8-inch springform pan.

  4. Place in the fridge while preparing the mousse.



Make the Chocolate Mousse


  1. Open the chilled coconut milk and scoop out the thick cream into a mixing bowl (save the liquid for smoothies).

  2. Melt the dairy-free chocolate in a microwave or double boiler until smooth.

  3. Whisk the melted chocolate, vanilla, maple syrup, and salt into the coconut cream until fully combined and silky.




Assemble the Cake


  1. Pour the chocolate mousse mixture over the chilled crust and smooth the top.

  2. Refrigerate for 3–4 hours, or until fully set.

  3. Slice, serve, and enjoy chilled.
