Ingredients
Quinoa - 2 cups
Shrimp - 1 pkg
Red Pepper - 1
Broccoli - 2 cups
Celery - 3 stalks
Green Onion - 2
Red Onion - 1
Green beans - 1 cup
Mini peas - ½ cup
Fresh garlic
Peppercorn
Fresh Parsley
Garlic powder
Lemon and herb Sauce
Poke Bowl Spice
Fresh lemon
Preparation
Use a pot and a wok or skillet.
In the pot prepare quinoa following the directions on the quinoa package.
In a Wok or large skillet sautéed all the vegetables, then add in cooked shrimp, stir in the lemon and herb sauce and add in all the spices to suit your taste.
Serve 3/4 cup quinoa, 1 cup of vegetables and 6-8 shrimp per serving - top with poke bowl spice and fresh lemon.
Tips
This is a great dish to make with any type of protein; including beef, chicken, fish, eggs, lentils or beans, and tofu.
